Since I already drank my Shakeology for breakfast today, on the menu for lunch is…Avocado! Avocado tuna salad is a healthy alternative to the traditional tuna salad. Replacing the mayo with avocado makes a world of difference! Not only are you subtracting numerous calories, you are swapping out bad fat for good and adding a protein punch to the already protein packed tuna. After trying this just once, I was hooked! I eat mine with a fork right from the container, but you can enjoy it on whole grain toast and it is just as yummy. I finished my lunch off with a handful of grapes. I am now fueled for the afternoon!
This recipe is an original of mine, although I have seen many renditions of this, I will tell you exactly how I make it taste perfect!
Avocado Tuna Salad
1 pouch white albacore tuna (in water)
2 sticks of chopped celery
Combine avocado, tuna, celery, onion, and a dash of each seasoning. Mash together with a fork. Spread on whole grain toast or enjoy right from the container! **This recipe of for 2 servings
