When you think stir fry, the main word that stands out is “fry”. Fried food usually means unhealthy food that should be avoided, but not in this case! This is an original recipe of mine. Sometimes the best meals come from the evenings when I look in the fridge and just create something from whatever we have! This is a prime example. The ingredients in this dish are all clean and healthy and the kids love it too!
2 large chicken breasts, cut into 1-2in cubes
1 cup red and yellow peppers, cut into 1 in slices
1 cup broccoli
1 cup baby carrots
1 cup cauliflower
2 Tbsp Coconut Oil
1 Tsp garlic powder
1 Tsp oregano
1 Tsp sea salt
1 Tsp pepper
Heat 1 Tbsp coconut oil in stir fry pan on medium heat, once melted add chicken
Use medium heat and cook chicken thoroughly, stirring occasionally
Add veggies, 1 Tbsp coconut oil, and seasonings
Sautee for 8 minutes using medium heat and stirring frequently
Reduce heat to low and cover, simmer for 5-10 minutes – veggies should be a little crisp when serving
Remove from heat and serve!
This recipe feeds a family of four, if serving more just add more ingredients! For the veggies, I use a market fresh medley bag that comes pre-cut with broccoli, cauliflower, and baby carrots.
