This recipe is a little off the beaten path. Which is a good thing! No, no it’s a great thing! Sometimes you have to jazz it up a little because you don’t want to get bored. There are millions and I mean millions of clean eating options and recipes, but sometimes it is easy to find a couple recipes that you enjoy and just stick with what you know. For me, that was the path I was on. There are a few staple items that are always on on our grocery list and a fresh medley bag of broccoli, cauliflower, and carrots is one of those must haves. I have found so many used for them and one of the ways we eat them are raw, however, no matter what I do I cannot come to enjoy raw cauliflower! So I am always looking for new ways to prepare it. Cauliflower is extremely healthy and very beneficial. It is packed with anti-oxidants and serves as an anti-inflammatory while aiding in digestive support. Another added benefit to this recipe is turmeric. Turmeric is best known as an anti-inflammatory, but it has also been linked to lower cholesterol and protect against Alzheimer’s disease. So remember with every delicious sip of this soup that you are truly doing your body good!
*Tip, I substituted the coconut milk for 1 Tsp of coconut oil. Nothing like adding some GOOD fats!
