Beef. It’s whats for dinner. This meal was inspired by a smoky southwestern spice recipe that I found in my 21 Day Fix eating plan book along with items that I had in my refrigerator. It was very flavorful and the whole family enjoyed it. My youngest one (she’s 15 months) ate the rice and beef only, but still enjoyed it non the less!
1 lb beef tips (I used grass fed beef)
2 cups peppers- red and yellow cut into 1in slices
1 cup mushrooms, sliced
1 small yellow onion- chopped into slices
1 cup uncooked brown rice (may also sub for quinoa)
1 tbsp extra virgin coconut oil
2 tbsp Smoky Southwestern Seasoning (see below for ingredients)
Using medium heat, heat coconut oil in wok and add beef tips.
Brown beef until cooked almost thoroughly.
Add peppers, mushrooms, and onion.
Prepare brown rice according to directions.
Once peppers and onions begin to soften sprinkle with seasoning.
Allow to simmer 5-10 minutes, stirring frequently (if meat starts to dry out, add a little bit of water).
Remove from heat and serve with brown rice!
Smoky Southwestern Seasoning
1 tbsp chili powder
2 tsp ground cumin
1 tsp coriander
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp smoked paprika
1 tsp sea salt
