WOW! This was seriously like a party in my mouth! I am a girl that was raised on homecookin’ and unfortunately, that doesn’t always mean healthy. At least back in the day it didn’t, but there are so many healthy ways to make an old recipe. I am sooo happy I stumbled upon this one! It’s a stuffed cabbage recipe, or as I like to call it “Pigs in a blanket.” Eating this made me think of being in my Grandma’s kitchen enjoying one of her best dishes. It made me chuckle because I thought to myself, she would be so proud of me. I was able to tweak the recipe a bit without compromising taste. It is super easy and only takes about half the time of the traditional recipe. I HIGHLY recommend trying this for sure!!
1 1/2- 2 lbs lean ground beef or turkey- I use turkey
1 Tbsp evo oil
1 large onion, chopped
1 small cabbage, chopped
1 garlic clove, minced
2 cans (14.5oz each)diced tomatoes- I used fresh tomatoes: 6 of the small sweet tomatoes. If you use canned, then be sure to choose one with no salt added
1 can (8oz) tomato sauce- Again choose one with no added salt
1/2 cup water
1 Tsp ground black pepper
1 Tsp sea salt
In a large skillet (I used a 14′ cast iron skillet) heat evo oil using medium heat. Add ground meat and onion. Stirring frequently cook until meat is browned and onion is tender. Add garlic and cook for 1 more minute.
Add chopped cabbage, tomatoes, tomato sauce, water, pepper and salt. Stir until cabbage is completely coated in sauce. Cover and simmer (stirring occasionally) about 20-30 minutes until cabbage is tender.
