So I was experimenting in the kitchen and trying to come up with a new way to make baked chicken. Chicken, veggies, seasoning…get’s played out. I took what I had available and created an awesome dish! It’s light enough to eat for lunch and can be paired with a salad or some brown rice for dinner. It is so simple and so worth a try! 2-3 Boneless chicken breasts- cut into 1in cubes
3 Medium sweet potatoes- peeled and cut into 1in cubes
1 Bundle of asparagus- trimmed and cut in 1/2
1/2 cup of chicken broth
3 Tsp raw honey
2 Tbsp cinnamon
Preheat oven to 425. In a baking dish or roasting pan combine chicken, sweet potatoes, and asparagus. Pour chicken broth over the chicken and veggies. Add raw honey and sprinkle with cinnamon. Bake 40-45 minutes, stir several times during baking in order to evenly coat with the honey.
