Slow cooker meals…oh how I love thee!! It is a can’t beat way to make dinner, especially on really busy days. My husband has recently been getting some great meat from a local farm. For this particular recipe I used a grass-fed beef round roast. Choosing grass-fed beef has many health benefits and I suggest that everyone buy grass-fed every time. If they do not sell it at your local supermarket, you can find farms in your area that sell it by the cow. A cow can be quite expensive so we usually find family members or friends that want to go in on it with us. We usually end up about a 1/4 cow and that can stretch for quite some time. with Cook time on this recipe takes a little longer, so keep that in mind when deciding what time you will prep the meal. It takes roughly 8-10 hours to cook.
4 pounds chuck roast
salt and pepper to taste
1 packet dry onion soup mix
1 cup water
3 carrots, chopped
1 onion, chopped
3 potatoes, peeled and cubed
1 stalk celery, chopped
-Season the roast with salt and pepper to taste. Brown on all sides in a large skillet over high heat, about 4 minutes per side.
-Place the roast in the slow cooker and add the soup mix, water, carrots, onion, potatoes, and celery.
-Cover and cook on Low setting for 8 to 10 hours.
