Simple way to make skillet potatoes with only 4 ingredients. I usually make these for breakfast at our house, but we also eat them for dinner from time to time. This recipe is a healthy way to fry them! This particular recipe yeilds about 4 servings, but it is so simple to add a lot more for larger quantities to take to a party or get together.
-5 small to medium sized red potatoes; washed and cut into cubes
-2 cups uncooked baby spinach
-1 tbsp extra virgin coconut oil
-1 tsp garlic powder
-1 tsp onion powder
-black pepper to taste
Heat coconut oil over medium heat. Add potatoes (slowly to avoid oil splashing) cover for 5 minutes, then flip potatoes to avoid burning. Cover and simmer for 5 more minutes. Cook uncovered for 10 minutes flipping potatoes occasionally. Add seasoning and stir to coat evenly. Add spinach and simmer until spinach wilts; about 2-3 minutes. ENJOY!
We enjoyed ours for breakfast with scrambled eggs!
