You know, like crab cakes, but with sweet potatoes! Yum!
So, I’m not sure if this has ever happened to you, but I found an amazing recipe that I immediately started drooling over just thinking about it, then I went to the kitchen and… didn’t have all of the ingredients to make it!! Ughhh! Instead of giving up on the dream, I figured I would improvise with what I had. I will put the recipe that I made and also include what the original recipe called for, in case you don’t have all the ingredients 😉
-3 medium sized sweet potatoes (or 2 large depending upon what you have)
-1 small yellow onion- finely chopped (or 2 scallions- chopped)
-1/2 tsp cinnamon
-1/2 tsp cumin
-1/4 tsp salt
-2 tsp coconut oil (can use extra virgin olive oil)
Step 1: My sweet potatoes were already baked, but if yours are not, you can peel and grate them into a mixing bowl. Add egg, cinnamon, cumin, and salt.
Mix with your hands.
Step 2: In a skillet, melt coconut oil over medium heat.
Step 3: Shape patties from the mixture and place in the skillet.
Step 4: Heat until both sides are browned. About 4 minutes on side 1, flip and about 2-3 on side 2. ENJOY!
*If you are anything like me and 99% of the time end up burning your master piece on your first try…IT’S OKAY! I burned my first round and they were still delicious and husband approved!
