Wow! I am a little disappointed with myself that I did not try this recipe sooner! I am always looking for new cauliflower recipes. Cauliflower is not my favorite vegetable, but the health benefits are awesome. It is packed with anti-oxidants and serves as an anti-inflammatory while aiding in digestive support. The pizza takes about an hour start to finish and can be made to your liking. Added bonus, the kiddos ate it too! Yay. Eat If cut into 8 slices, it contains only 50 calories and 2 carbs! (Good carbs that is!! ) So eat up and ENJOY!
-1/2 head of cauliflower
-1 cup shredded mozzarella cheese (part-skim)
-1 egg- beaten
-1 clove garlic- minced
-1 tsp basil
-1 tsp oregano
-Toppings of choice
– Preheat oven to 400
– Prep pizza stone by greasing with extra virgin olive oil. You can use a cookie sheet as well. **If you do not grease it, the crust WILL stick if you do not.
-Remove the stems and leaves from the cauliflower and chop the florets into chunks. Add to food processor and pulse until the texture is similar to rice.
-Then saute the cauliflower in a non-stick pan over medium heat for roughly 6-8 minutes. The cauliflower will look translucent when ready.
-In a bowl, combine the cauliflower and any the remaining ingredients.
-Spread the “dough” out evenly over the stone. Thickness should be about 1/4in and should be about 10in in diameter.
-Bake for about 25-30 minutes or until the crust is crispy around the edges. It should be a golden color and cooked the whole way through.
-Remove the crust from the oven and top pizza with sauce and desired toppings. I used mushrooms and peppers, but only on half since we were sharing with the toddlers. Use a little bit of cheese when topping, you don’t need much since there is already cheese baked into the crust.
-Broil the pizza for 5 minutes or until the toppings are hot and the cheese is melted. I did this one on the high setting for 4 minutes and it made the toppings crispy. We like it that way, but you may want to do low setting.
You can top your pizza with anything you enjoy. I saw a recipe that lines the crust with hummus before adding the sauce, and I am definitely trying that next time!! Just keep in mind when you are adding toppings, the pizza only broils for a few minutes. I sauteed the mushrooms and peppers while the crust baked. ENJOY!
