Crockpot recipes are awesome! They are so easy and convenient. I made this soup recipe yesterday and it was a big hit. It only calls for a few ingredients and makes enough for leftovers.
-1 pound of ground turkey (in this case I used grass fed ground beef)
-1/2 onion, chopped
-2 green peppers, chopped
-1 14.5oz can diced tomatoes (try to get one with no added salt)
-1 15oz can tomato sauce
-14oz beef stock or beef broth (use low sodium)
-1 tsp oregano
-1 tsp garlic salt
-1 tbsp Worcestershire sauce
-black pepper to taste
-2 cups brown rice, cooked (can also use quinoa)
Brown the ground meat over medium heat. Put everything in the crockpot, except the rice. Cook 6-8 hours on low heat (about 3 hours on high heat).
In a bowl combine a scoop of the soup with a scoop of rice.
