Here is a healthy little side dish, and the best part is that it can be tweaked to your taste.
-2 cups raw brussel sprouts
-1 tbsp extra virgin olive oil
-1/2 tsp garlic powder
-1/2 tsp sea salt
-1/2 tsp black pepper
-1/4 cup fresh grated Parmesan cheese
-Preheat oven to 375
-Cut ends off of brussel sprouts then cut in half
-In a large bowl toss sprouts, seasonings, and eevo to until well coated
-Spread onto a baking sheet
-Bake 15-20 minutes- flipping half way through
-Remove from baking sheet and sprinkle with Parmesan cheese
***You can also tweak this recipe to add additional toppings. Once cooked, I have tossed in balsamic vinaigrette and then coated with the Parmesan cheese OR you can substitute the Parmesan for feta cheese and add chunks of cooked bacon. The possibilities are endless!!
