Healthy, Baked Chicken Nuggets
Looking for a healthy recipe that the whole family will enjoy? These chicken nuggets are simple and only call for 4 ingredients. They are a very healthy alternative to the processed nuggets that the kiddos seem to love. Total time to prep and bake is only about 25 minutes. Pair these with some steamed veggies or sweet potato fries and you’re all set! I’ll be having the leftovers on a bed of greens tomorrow as a chicken salad for lunch. Yum!
– 3 large chicken breasts: cut into small cubes
– 2 eggs: beaten
– 1/2 cup of whole wheat bread crumbs
– 1 tbsp extra virgin olive oil
-Preheat oven to 425
-Using the olive oil, coat a baking sheet
-In a bowl mix your chicken cubes and beaten egg// bread crumbs go in a separate bowl
-Roll the egg covered chicken pieces in the bread crumbs until well coated
-Place “nuggets” on the greased baking sheet
*I drizzled a little extra olive oil over the nuggets before baking
-Bake 8-10 minutes and then flip all pieces of chicken over and bake another 5-6 minutes

I had extra chicken that did not fit on the the pan and instead of baking 2 batches, I tried some fried. They are just s yummy, but a little more on the crispy side.
-Take 2 tbsp of extra virgin olive oil (or I used coconut oil) and heat in a medium saucepan. “Fry” for about 4 minutes and flip, continue to flip the pieces until they are golden brown and cooked the whole way through.
