Parmesan Crusted Asparagus
This is a delicious and easy side dish and ready in just minutes. I pair it with grilled chicken for a light lunch as well. You don’t need many ingredients or much time. Score!
-1 bundle of asparagus, trimmed
-1tsp coconut oil
-1/4 cup water
-1/2 tsp sea salt
-1/2 tsp black pepper
-1/4 cup fresh grated Parmesan cheese
-In saucepan, bring water and asparagus to a boil. Cover and simmer for about 5 minutes.
-Return to medium heat. Add coconut oil, sea salt, and pepper. Simmer for 3-4 minutes, turning over half way.
-Top with grated Parmesan cheese and remove from heat.
