This recipe is so filling and just about the easiest recipe I have ever made. It is great for breakfast or pre-workout. You can also substitute the fruit of your choice. I have made it with strawberries, bananas, and raspberries before. Blueberry seems to be my go-to because it is just so yummy! It is also 21 Day Fix and Fix Extreme approved!
Makes 1 serving:
1 cup water
1 pinch sea salt
1/4 cup steel cut oats
1 tsp organic no sugar added peanut butter
2 tbsp unsweetened almond milk (optional)
1/2 cup blueberries
-Bring water and salt to a boil in a medium saucpan over medium-high heat. Once boiling reduce to low heat.
-Add oats; cook, stirring frequently, for 15-20 minutes, or until water is just absorbed. Remove from heat and let stand 5 minutes.
-Add peanut buteer, mix well. (If using almond milk, add here)
-Top with blueberries.
If following the Fix eating plan it is 1 yellow, 1/2 purple, 1 tsp (you can use 1 cup of fruit to consider it 1 purple)
