Red meat definitely gets a bad name and is usually a no-no when it comes to “dieting.” The secret behind these delicious bad boys is that they are grass-fed beef. What is it with this whole grass-fed beef thing anyway?
Well, according to the Mayo Clinic, Grass-fed beef may have some heart-health benefits that other types of beef don’t have. When compared with other types of beef, grass-fed beef may have:
- Less total fat
- More heart-healthy omega-3 fatty acids
- More conjugated linoleic acid, a type of fat that’s thought to reduce heart disease and cancer risks
- More antioxidant vitamins, such as vitamin E
Lean beef that’s 10 percent fat or less — whether it’s grass-fed beef or another type of beef — can be part of a heart-healthy diet. Although many people think grass-fed beef tastes better, it’s generally more expensive and there is limited long-term research to definitively prove that grass-fed beef is better for you. So I wanted to put a little spin on the regular old burger and came up with this yummy recipe. I topped it off with a portobello cap and paired it with roasted, buffalo cauliflower (see bottom for recipe) and added a small side salad to complete the meal.
(Makes 4 burgers)
– 1lb grass-fed beef
-4 portobello caps
-1 medium squash (or zucchini)
-1/2 cup of shredded swiss cheese
-1 tsp garlic salt
-1 tsp sea salt
-1 tsp paprika
-pepper to taste
-1 tsp extra virgin olive oil
-Mix all ingredients except portobello caps in bowl and form four 1/4 pound patties.
-Grill to desired temperature or heat 1 tsp of extra virgin olive oil in a pan over medium heat and cook until desired temperature, flipping half way through.
-Grill portobello caps or place in pan and heat 1 tsp of extra virgin olive oil in a pan over medium heat and cook until mushrooms soften.
-Place the portobello cap on top of the burger and enjoy!
Roasted Buffalo Cauliflower Recipe
-1 medium head of cauliflower
-2 tsp extra virgin olive oil
-1 tsp onion powder
-1 tsp garlic powder
-1 tsp sea salt
-1/4 cup hot sauce
-Preheat oven to 400 degrees.
-Chop head of cauliflower.
-Toss in a large mixing bowl with rest of ingredients except hot sauce.
-Place on lined baking sheet.
-Bake for 18-20 minutes, turning occasionally.
-Drizzle with hot sauce and stir until coated.
